This week’s recipe is lovingly called Steak & Bacon Excite

It’s for 2 people.
INGREDIENTS
1 x 8oz Sirloin Steak
6 rashers of smoked streaky bacon
1/2 red onion
4 cloves of garlic
1 sweet red pepper
1 medium sized clump of fresh coriander
2 running handfuls of brown rice
rapeseed oil
30ml of brandy
HERE’S WHAT YOU DO
Slice the steak into 1cm wide strips, chop the bacon into squares.
Finely chop the onion and garlic, loosely chop the red pepper and roughly chop the main part of the coriander (no stems)
Bring a pan of water to boil and put the rice in, reducing to a simmer for between 10-15 mins, then take off the heat and allow to stand.
Take a medium sized frying pan, add a drizzle of rapeseed oil and put on full heat.
When the pan is hot, add the onion and garlic, turn the heat down and allow the onion and garlic to saute until the onion is translucent.
Turn the heat back up and add the bacon, frying it until it is crispy but not burnt, then add the steak, stirring/flipping it for 2 mins.
Add the pepper and stir in. Take off heat and allow to stand.
Drain the rice, rinse with hot water if necessary and return the rice to the pan with a knob of butter, stirring in the butter until melted.
Add the coriander and stir in. Put the rice back on a low heat and stir constantly.
Bring the pan with the steak etc in it up to a high heat, when hot add the brandy and if you’re using a electric hob, light with a match to flambe.
Take the steak off the heat.
Serve the rice to one side of the plate with the steak and bacon alongside it.
